Butter and Butter Milk

Butter is a dairy product made from separating whole milk or cream into fat and buttermilk. The fat is compressed and chilled into blocks of butter. The color of the butter will depend on the time of year. Cows that consume green plants, such as fresh grass, develop a yellow pigmentation due to the presence of beta-carotene. This beta-carotene is then transferred to the milk and, subsequently, the butter. Conversely, cows fed dry hay and grains lack beta-carotene in their diet, resulting in white butter.
